Chocolate Chili?! This Week’s Whole30 Check-in!

So, I’m still at about a 75 – 80% success rate with my Whole30 challenge. I’ve dropped processed carbs. I’m still drinking wine. And I’ve had some dairy, cow’s milk cheese. So instead of talking about how I’m falling off track, I thought I’d share a ‘recipe’ from this weekend.

While trying to find tasty recipes to eat on Whole30, I have come across reference to this chocolate chili almost everywhere I look! So since I enjoy a bite of the chocolate now and then (hahah – understatement much?!) and I love a good bowl of chili I was ready to dive in!.

First off, I went to the store to get some fresh ground beef. I’d considered doing a beef/turkey mix but got lazy.

Chopped up some onions, threw them into a hot pan with some coconut oil to get them softened up. Then put in a pile of beef and browned that up. (I was doing this the night before I was going to assemble the chili in my crock pot because I didn’t want the meat to go bad!). Put it all in a container in the fridge.

Next, after a trip to the store to get a few other things I needed, it was time to start the actual chili making!

I put the meat mixture into the crockpot. Added a few tablespoons of chili powder, a sprinkle of (extra) cumin, a couple tablespoons of cocoa powder, some tomato paste, a can of fire roasted diced tomatoes, a big can of crushed tomatoes and enough stock (I think it was chicken!) to cover the meat.

 And let it cook for a few hours – while I mowed the lawn and did a few other things.

This turned out quite tasty – the cocoa adds a little bitterness but it’s not unpleasant at all.

And I don’t even miss the beans!!

There are lots of different recipes for something similar online but they all have the basic ingredients – play with the proportions til you get something you like!

Today has been so very exciting so far! Well…exciting might not be the right word….

I had my first chance at my new job to work from home and almost had a panic attack when I had problems connecting to the VPN — still managed to get in by 6 and get crackin’!

Then, I had a dentist appointment. Since I’m getting older and getting diabetic, I go every 4 months instead of every 6. And generally I have pretty good teeth if I do say so myself. Though, I *have* noticed some bleeding when I floss, which is never a good sign. Of course when the hygienist started poking around with sharp tools it looked like open heart surgery in my mouth — the blood was flowing. Apparently I have a lot of “deep pockets” of “bacteria” around some crowns and they are crawling to adjacent teeth and areas of my mouth (yes, I too was picturing a mouth full of bugs thankyouverymuch.) So we did some “irrigating” and she shot some antibiotics in the worst spots (three worst spots…THREE!!). Other than that, however, “You really do have good dental hygiene habits”. Yeah. Thanks. I do floss regularly and I use a Sonic Care brush — which I highly recommend!

After an HOUR in the dentist chair, I headed over to my doctor. That whole diabetic thing means I should go see him every 3 months to keep up on my A1c readings. I am wishing I had skipped today! Turns out that my A1c is at the level it was when I was first diagnosed 5.5 years ago.

This means that I am back at square one. Though, about 30 pounds lighter than when I was first diagnosed. And much more active than I was then. AND much more careful about what I put in my mouth at mealtime! So it shouldn’t be too difficult to get things back in control.

  • I will probably continue some form of Whole30 or Paleo eating for longer than 30 days.
  • I will have to get back in the habit of more regular testing during the day so I can catch high numbers before they get too bad
  • I will have to be MUCH more consistent with running and yoga and all other activity – which I was planning on anyway given I have some big races in the fall!

I’ve done it before, and I know I can do it again!!!

Let’s Eat All The Things!!!

Or, how my second week of Whole30 is going…

Finally back from vacation, Finally ready to buckle down and kick this thing into gear! So, I’ve got my fruits, I’ve got my veggies, I’ve got protein out the as…well, you see where I’m going with this. I’ve thrown out the milk even and bought coconut milk for my coffee!

This should be a piece of cake. Mmmmm….cake…

First day back things went pretty well…I slipped and put half and half in my first cup of coffee…but other than that, I was about 85% on track. I might have eaten some cheese.

Friday was tough cause it was National Donut Day. And, if you need to know anything about me, you need to know that I have a serious…SERIOUS, sweet tooth (yeah, it doesn’t make being diabetic very easy!) and I have a definite affinity for the little round fried goodies. And, as I may or may not have mentioned, the lobby of my office building contains a Dunkin Donuts! But, as luck would have it, I woke up feeling kind of punky on Friday and not even a donut could tempt me to eat. So…I was pretty much on track only cause I was drinking water and eating an apple all morning!

Friday night I might have had some cheese and wine…

Saturday and Sunday were easy days to stay on track since I have no temptations in the house!

Back at work – packing a lunch was the best plan since we have no vending machines in the office ( that I know of…)

But today? Today I want to EAT EVERTHING IN SIGHT! With a definite preference for things that might be termed “crap”…luckily, none available!

So, even on days that I’ve slipped up, overall I’m definitely making some better choices and thinking twice before putting something in my mouth!

It can only get easier, right?!! 

Not Quite Whole30

To be honest, I knew the first few days were not going to be good — not because I don’t want to do this (I do, I really do!) but because I was going to be out of my home and kitchen. I have been on vacation which to my dad means making sure I “eat enough”…and we don’t do a whole lot of cooking. It’s been a round of restaurant eating and beach parties!

On the bright side, I do think I’m at least making better choices when I am out. Mostly. Shared my hot dog(s) with the dog on Saturday, limited buns. Had chicken instead of pasta at lunch on Sunday. I did eat a couple of fries last night. And there was the egg sandwich for lunch yesterday. But I skipped the bread on my BBQ sandwich last night – I’m taking the little wins!

Who knows what today brings but I am constantly thinking about what I can make when I’m back home and start my Whole30 in earnest on Thursday.
